Blueberry Pancakes with Whipped Butter
Makes 12 Pancakes or 8 Waffles or 8 Crepes
- 1¼ cups all-purpose flour
- 1½ tsp baking powder (omit from crepes recipes)
- Pinch salt
- 2 tbsp sugar
- 1 cup milk
- ½ tsp vanilla
- 1 lg egg
- 2 tbsp veg oil
- 1 cup blueberries
- Blueberries for garnish
In a bowl, sift flour, baking powder, salt and sugar. Add milk, vanilla, egg and oil and beat to a smooth batter. Fold in blueberries and let stand for 5 minutes.
In a skillet, med heat, spoon tablespoons of batter into a lightly greased skillet and cook until bubbles appear on surface. Turnover and cook until golden brown. Repeat process with remaining batter. Serve with whipped butter and your favorite syrup. Garnish with blueberries.
- ½ cup butter (unsalted)
- 2 tbsp milk
- 1 tbsp corn syrup
Whip butter until softened. Add milk and syrup, beat until light and fluffy.
