Basic Pancakes

Basic batter for Pancakes

Makes 12 Pancakes


  • 1¼ cups all-purpose flour
  • 1½ tsp baking powder
  • Pinch salt
  • 1 cup milk
  • ½ tsp vanilla
  • 2 lg egg
  • 2 tbsp oil (or melted butter)


Sift flour, baking powder and salt. Add milk, vanilla, egg and oil and beat to a smooth batter.

In a non-stick skillet over med-high heat, spoon tablespoons of batter into skillet and cook until bubbles appear on surface. Turnover and cook until golden brown. Repeat process with remaining batter. Serve with your favorite syrups.
