Fried Potato Sandwich
Makes 2 servings
- 1 tbsp pork fat (or vegetable oil)
- 1 lg potato (1/4” slices)
- 4 thick slices homemade bread
- 2 tbsp Mayonnaise
In a skillet, med-high heat, fry potato slices in pork fat until golden brown. Spread two slices of bread with mayonnaise and layer evenly with potato slices.
