Newfoundland Recipes-Kedgeree Salmon1-www.saltjunk.comKedgeree (w/ Smoked Salmon)

Makes 2 servings


  • 1 cup rice (cooked)
  • 1 cup smoke salmon (flaked)
  • 2 hard boiled eggs (yolks removed – egg whites chopped)
  • 1/4 cup butter
  • Salt & pepper
  • 1 tsp parsley (chopped for garnish)
  • 1 hard boiled egg (sliced for garnish)


Cook rice as per instructions.. Add flaked salmon and egg whites to rice and mix. Stir in melted butter and blend. Season to taste.  Heat thoroughly and garnished with sliced hard boil egg and parsley. Excellent with homemade buns and a cup of good steeped tea.
