Puréed Pea Soup w/ Smoked Ham

  • 2 tbsp pork fat (bacon fat or vegetable oil)
  • 1 lg onion (chopped)
  • 2 cloves garlic (minced)
  • 2 lg celery stalk (chopped)
  • 1 lg carrot (chopped)
  • 2 cup yellow split peas
  • Dash cumin
  • ¼ tsp thyme
  • 6 cups vegetable or chicken broth (stock or water)
  • Salt & pepper
  • 1 cup smoked ham (cubed in sm pieces)


In a soup pot, low-med heat,  sweat onion, garlic, celery, carrot, peas, cumin and thyme in pork fat for 10 minutes (do not brown).  Season to taste.  Add broth, bring to a boil, cover pot and simmer 30-45 minutes, or until all peas are tender. Purée soup with a food mill or an immersion blender until smooth and texture looks creamy. Season to taste.  Add more broth if necessary for desired consistency or thickness. Add smoke ham and stir. Garnish with greens. Excellent with crusty rolls or crackers.
