Boiled Beans with Pork & Molasses

  • 2 cups navy beans
  • 6 cups water
  • 1 med onion, chopped
  • 8 pieces salt pork (1”L x ½ thick)
  • ¼ cup molasses
  • Salt & pepper


Wash beans thoroughly and soak for 6-8 hours or overnight. Drain and place in a large saucepan. Add water, onion, salt pork, and molasses. Season to taste. Bring to a boil and simmer covered for 1½-2 hours or until beans are cooked and tender.  Stir occasionally. Serve piping hot with fresh baked bread or fried toutons.
