Poor Man’s Stew

Makes 4 servings


  • 2 tbsp pork fat (or vegetable oil)
  • 1 lg onion (med chopped)
  • 4 cups water
  • 2 lg carrots (med chopped)
  • 1 sm parsnips (med chopped)
  • 1 sm turnip (med chopped)
  • 6 med potatoes (med cubed)
  • ½ tsp garlic (optional)
  • Salt & pepper


In a skillet, med-high heat, sauté onion in pork fat until golden brown. Add & sweat carrot, parsnip, turnip and potatoes for 10 minutes. Add water and season to taste. Cover skillet, bring to a boil and simmer until vegetables are cook or tender. My Dad use to call this meal, “rabbit stew without the rabbit”.
