- 1 lb salt cod (pieces or boned)
- 1½ lbs potatoes
- 1 med onion (finely chopped)
- 2 tbsp pork fat (or veg oil)
- Salt & pepper
Soak salt cod in cold water overnight (approx 6-8 hours). Drain and replace with cold water.
In a med-size pot, bring cod fish to a slow boil and add potatoes. Bring to a boil and simmer for 20-30 minutes or until potatoes are cooked and tender. Remove from heat and drain. Let cool. Flake fish and cup potatoes in small pieces.
In a skillet, med-high heat, sauté onion in pork fat until golden brown. Add fish and potatoes, stir until heated throughout. Season to taste. Serve piping hot and garnish with onions, pork fat and scrunchions. Don’t forget your cup of hot steeped tea and fresh bread with molasses.
