Makes 2½ cups
- 2 tbsp vegetable oil
- 1 lg onion (thinly sliced or chopped)
- 2 tbsp all-purpose flour
- 2 cups chicken or beef broth (or water)
- Salt & pepper
- Garlic (optional)
In a large skillet, med-high heat, sauté onions in oil until soften and golden brown (approx 10 minutes). Season to taste and stir frequently. Sprinkle flour, blend thoroughly until a roux is formed (approx 2-3 minutes). Mixture should look nutty. Slowly whisk in broth or water. Stir until mixture thickens. Season to taste. Transfer to a serving cup. Add to your favourite dish.
