Flapjacks

Flapjacks are chewy bar cookies made from rolled oats, butter, syrup and brown sugar.  You can also add nuts, seeds and fruit for a slight variation. These chewy bars are excellent energy boosters and make quick snacks with only a few ingredients.

Ingredients:

  • 1 stick butter (½ cup)
  • 5 oz brown sugar
  • 1 tbsp corn syrup

In a large saucepan, on med-low heat, add butter, sugar, syrup and vanilla. Using a wooden spoon, stir ingredients until dissolved and remove from heat. Stir in oats, ensuring oats are well coated. Spoon mixture in a lightly greased pan.  Press down firmly with a spatula or spoon to even out mixture.
